Almond Butter Chocolate Treats

These Almond Butter Chocolate Treats are a simple way to enjoy a rich dessert-style snack without reaching for the usual sugary, highly processed treat.
The dark chocolate gives these treats that satisfying dessert feel, while also bringing naturally occurring antioxidant compounds called flavanols. The almond butter, walnuts, almonds, and protein powder help add protein, texture, and staying power. The nuts also bring healthy fats, which make the treat more satisfying and help keep it from feeling like another empty sweet snack.

Almond Butter Chocolate Treats Recipe
Low-Carb, High-Protein Dessert
Yield: 10 treats
Ingredients:
Almond Butter Filling
1 cup almond butter
1 cup mixed nuts, chopped
1/2 cup walnuts and 1/2 cup almonds works well
1/2 cup protein powder
2 tablespoons keto maple syrup
1 teaspoon vanilla extract
Dark Chocolate Coating
3/4 cup dark chocolate chips
1 teaspoon coconut oil
Maldon coarse sea salt or unsweetened coconut flakes, for topping
Instructions:
Mix the almond butter, chopped nuts, protein powder, keto maple syrup, and vanilla until fully combined.
Drizzle a small amount of melted dark chocolate into the bottom of 10 ice tray molds or ice tray compartments.
Add the almond butter mixture evenly to each mold and press it down gently.
Freeze for 30 to 60 minutes, until firm.
Melt the dark chocolate chips with the coconut oil until smooth.
Pour or drizzle melted chocolate over the top of each treat, letting it run lightly down the sides.
Sprinkle with coconut flakes or coarse sea salt.
Return to the freezer until the chocolate is set, then remove from the molds and enjoy.
Storage
Store in the refrigerator or freezer in an airtight container.
